Coconut Bread
4 eggs
2 c. sugar
1 c. oil
2 tsp. coconut extract
1 c. buttermilk
Whip all together until smooth & frothy.
In a separate bowl, mix:
3 c. flour
1 Tbsp. soda
1 c. shredded sweetened coconut
1/2 tsp. salt
1 c. finely chopped nuts (I used glazed walnuts)
Bake in a well-greased pan for 65-75 minutes at 325. When done, let sit in pan for 30 minutes before drizzling with glaze.
Glaze:
2 c. powder sugar
2 Tbsp. coconut extract
2 Tbsp. milk
Whisk together til smooth & runny.
After glaze has been absorbed, bread can be removed from pan & devoured.
